In the basic model of the communication process, what is the term for anything that interferes with or distorts a message between the sender and the receiver?
The term is noise. Noise is any interference that distorts or disrupts a message between sender and receiver, such as background sound, poor handwriting or jargon. Feedback is the receiver's response, and encoding is the sender turning ideas into a message, so neither describes interference.

Explanation
Noise is any interference that distorts the message as it travels through the channel, such as background sound, unclear handwriting or jargon. Feedback is the receiver's response to the message, and encoding is the sender's translation of ideas into a transmittable form. Neither of those describes distortion.
